Day 7: Lemons Lemons Everywhere
As I mentioned in an earlier post, my home is filled with lemons. We have a lemon surplus, you might say. Thankfully, I made a plan: lemon recipes! On Pinterest I have gathered some lemon recipes that look particularly appealing. Let’s choose one, shall we?
1) Fluffy Lemon Rosemary Layer Cake
Any time rosemary is in a dessert I think that it must be fancy yet rustic, rich, earthy, and dense. But this one promises fluffiness. Can my brain that is set in it’s ways open up to a fluffy rosemary dessert? There is only one way to find out.
2) Lemon Limoncello Cupcakes
Not mentioned in the title of this recipe are two words that send my heart soaring: lemon curd. Yes, these cupcakes are filled with lemon curd. A few years ago I was a lemon curd virgin. I didn’t even know about it, and when I found out about it I turned up my nose because I’m weary of anything that is a curd. Curds sound like something that is rotten! Turns out I was wrong. Lemon curd is everything. My only glitch with this recipe is that it calls for limencello, which I do not own and do not plan on buying or making. Will the recipe be lemony enough without it?
3) Easy Lemon Chicken
In a departure from the all dessert offerings I was sure to produce, here we have protein! Lemony, crispy, hot protein, sure to knock my socks off. It looks easy to prepare, I have all the ingredients, and maybe I’ll be seeing this dish on the dinner table in the near future.
4) Lemon Poppy Seed Pancakes
I love that pancakes are dessert but we eat them for breakfast. I also love that they are “easy” to make and yet so hard to get perfectly browned on both sides. It’s a challenge every time that I am usually very willing to accept. I like the high concentration of lemon in this recipe. I like the promise of a crispy edge, a not-too-sweet batter, and that sugar-lemon-zest combo. I don’t have poppy seeds, but chia seeds should work, right?
