Day 1: Happy New Year!

Happy New Year! 2015 has been a long time coming.  All through 2014, the new year has been winking at me, beckoning me, encouraging me, teasing me. What does it have in store, I wonder? And, exactly as anticipated, 2015 and I found each other at the right time, in the right place, excited and full of ideas,

imagelike a big sister picking up her little sister from school. “Let’s go!” we both say and we hurry off into the afternoon to explore, learn, eat, and be delighted.

Day 1 of 2015 found me hiking up a hill, soaking in the sunshine and the positive energy from my hiking partners, and releasing the negativity from 2014.  Every ten feet I would let something go. The first ten feet: goodbye Chicago winters! The second: goodbye friends who aren’t true friends! The third: goodbye second guessing and doubts! The fourth: goodbye depression!

When I reached the top I was able to welcome so much more in. Hello sunshine! Welcome! reach through me with your powerful rays to warm my toes, to warm my bones, to warm my heart! Hello knowledge! I finally have an idea of the things I need for a balanced, healthy, happy life, and I’m in the perfect position to use that knowledge. Hello trust! Well… not that one so much right now. But this year is a good year to work on trusting myself, trusting God, and trusting others.

That night for dinner was an amazing jalapeno and cheese stuffed burger, heavy on the lettuce.

I love lettuce and burgers, but I also love buns. So, I usually do something like a lettuce bun sandwiched between bread buns. Delish. And, of course, dessert happened.

To be more accurate, dessert was planned. It was a holiday, and to make it festive I made sure I had good things to eat. This is my second time making this chocolate pie, and let me tell you it is unbelievable. I still can’t handle how good it is. imageThe chocolate taste is neither too heavy nor too weak and the pudding sets up so it looks like pie when you slice it. My taste buds go into raptures just thinking of it. The recipe is credited to The Pioneer Woman. Click on the link for this glorious recipe. Confession: I used to hate cream pie. This was a mistake. I have come to realize I hate pie created with instant pudding mix. I don’t hate pie when it is done the proper way, and I am pleased to announce that I have one more thing to love in 2015: chocolate pie.

2015 is waiting for us. Let’s be delighted.
